American Summer Cake
Ingredients
1/2 cup white sugar
1/4 cup Stevia
1/2 cup butter
2 eggs
2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1/4 ground flax seeds
1 3/4 teaspoons baking powder
1/2 cup milk

Directions
Preheat oven to 350 F (175 C).  Grease and flour a 9x9 inch pan or line a muffin pan with paper liners.  In a medium bowl, cream together the sugar and butter. Beat in the eggs one at a time, then stir in the vanilla.  Combine flour and baking powder, add to the creamed mixture, and mix well. Finally, stir in the milk until batter is smooth. Pour or spoon batter into the prepared pan.  Bake for 30 to 40 minutes in the preheated oven. For cupcakes, bake 20 to 25 minutes. Cake is done when it springs back to the touch.

Topping
Make real whipping cream using heavy cream and add sugar after whipped up with hand mixer.  Cover cooled cake with whipping cream and add sliced strawberries and blueberries in flag pattern for the fourth of July or use other sliced fruit!

For lighter version skip the cake and layer fruit with 1/2 whipping cream and 1/2 plain Greek yogurt (sweeten with agave)!!

Summer Veggie Ranch Dip
Ingredients
1/2 Cup plain yogurt
1/2 Cup sour cream or mayo (or mixture of both)
1 tablespoon dried parsley flakes
1 tablespoon minced chives (optional)
1 tablespoon white vinegar (or any kind, and you might need extra depending on taste)
1 teaspoon onion powder
1 teaspoon garlic powder
1/4 teaspoon salt
1/2 teaspoon celery salt
1/4 teaspoon dill
1/4 teaspoon pepper

Red Raspberry Popsicles
Blend orange-pineapple-banana juice with frozen red raspberries and freeze in your own popsicle holders!!
